Global: Rework keycloak setup

• Simplify realm import/export, move the scripts to a separate directory, remove redundant docker compose import file
• Rework docker compose file with fallback values and additional environment variables
• Update the migration file to reflect the current state of our production setup
• Update docs
• Closes #1 (closed)
